I made the lowfat vanilla cupcakes and they turned out quite good, though I will agree they are a bit more like muffins than cupcakes. Hon, it can't all be the same as with eggs and milk! Well my first atempt was the margarita cupcakes. I followed the recipe exactly and even brought them out of the oven when tested with a knife they were done. Then they all sank...what a shame. So not one to be deterred I made the basic chocolate cupcakes. They rose so well and they have a nice domed top. They are still warm so I dare not frost them yet. In the meantime I made another batch of maragitas. Left them in the oven for longer, they seemed okay quite firm to the touch but ultimately sank when I took them out of the oven and are really doughy in texture. Any help would be appreciated.
